A spicy version of the traditional frittata is sure to warm you up on a cold winter's day.
It can also be enjoyed in the other three seasons as well as winter with no adverse effect.
2 c hash brown potatoes (see our recipe)
1 McBride's Organic Farm red bell pepper (diced)
1 McBride's Organic Farm red onion (diced)
4 Ontario farm fresh eggs (beaten)
1/2 c cheddar cheese (grated) 2 T olive oil
1 t chili powder
1 t red pepper flakes
With the hash browns previously prepared add the vegetables, spices and sautée in a pan with
heated oil until the vegetables are tender. Pour the egg mixture over top and cover over medium
low heat until eggs appear cooked from the top. Add cheese and cover until cheese has melted.
Cut into wedges and serve.
