Let's start off with a quick explanation of what we are making and what we are making it with.
This soup is great for the holidays - from Thanksgiving through to the New Year. Celeriac is also
known as celery root and Stilton is a type of blue cheese originating from England. Together, in
a soup, they help make every family get together that much more special.





2 McBride's Organic Farm celeriac heads (peeled and chopped)
3 T McBride's Organic Farm basil (finely chopped)
8 c vegetable stock
350 g Stilton Cheese (crumbled)
3 T butter


In melted butter, simmer celeriac in covered skillet on stove-top for 10 minutes. Add basil and
simmer for another five minutes. Blend in vegetable stock and bring to a boil before allowing to
simmer for a further 15 minutes. Remove from heat, add cheese and stir until the Stilton has
melted. Your Celeriac and Stilton Soup is now ready to be served.
