Gad Zukes! These are the best zuke patties - ever! We weren't too sure what to expect when we
came across this recipe but the end result was delicious. Hot or cold, breakfast or supper, these
tasty zuke patties are sure to become a staple in your home.
2 c McBride's Organic Farm zucchini (grated)
1 McBride's Organic Farm onion
2 organic farm fresh eggs
1/2 c flour
1/2 c parmesan cheese (grated)
1/2 c old cheddar cheese (grated)
2 T olive oil
Grate the zucchini and soak up excess moisture with tea towel or paper towel. Grate and mix
everything else - along with the zucchini - in a large sized bowl. Over medium-low heat add the
olive oil and then scoop dollops of the mixture into a skillet. Turn over when golden brown -
approximately 3-4 minutes per side. Yields eight, depending on the size of your dollop. Serve
alone, with sour cream, apple sauce or your favorite breakfast meat.
