We could have called this soup - delicious hot or cold - scape vichyssoise but it’s harder to type than it is
to say. No matter what it is called our potato scape soup is easy to make and you won't be called late for




2 c McBride's Organic Farm garlic scapes (chopped)
2 lbs McBride's Organic Farm russet potatoes (diced)
1 McBride's Organic Farm red onion (diced)
1/4 c butter
6 c vegetable stock
1 T cayenne pepper or dry mustard (we've tried them both!)

Sauté scapes and onion in butter over medium low heat until onions are translucent. Add tablespoon of
your favorite spice, potatoes and stock. Continue cooking on medium low heat for one hour or until
potatoes are tender. Purée and serve. It is that easy. Preparation time for this seasonal recipe is one
year and ten minutes. One year for the scapes and ten minutes for everything else. Enjoy!
