1 McBride's Organic Farm pie pumpkin (quartered)
1 McBride's Organic Farm onion (quartered)
2 McBride's Organic Farm garlic cloves (chopped fine)
1/2 c Lavender Hills Farm honey
1 c organic rice milk (most recipes call for an equal amount of heavy cream)


While your oven preheats to 400C chop, cut and measure out your ingredients. With this recipe
we put an equal amount of onion and garlic atop each pumpkin quarter and finish with a
tablespoon of honey. Bake for one-half hour until pumpkin is cooked. Easily peel pumpkin once
it has cooled and purée ingredients while adding rice milk. Serve on its own, with a dollop of
yoghurt or a scattering of diced hot peppers. This soup goes well with arugula salad.
