Now I know what to do with all the fennel we grow! Use the bulbs and stalks in the recipe, and
save the feathery tops for a garnish.

Ingredients
2 large McBride's Organic Farm onions, peeled and cut into thick slices
2 medium bulbs McBride's Organic Farm fennel, sliced into 1/4 inch slices
2 lbs McBride's Organic Farm potatoes, sliced into 1/4 inch slices
3 T butter
1/4 cup olive oil
1/2 t black pepper


Preparation
Preheat oven to 400F. Put butter and olive oil into a large baking pan, and heat in oven until hot.
Remove from oven, add the onion and fennel slices, toss well, and cook for 20 minutes, stirring
after ten minutes. Add sliced potatoes, and toss to mix with the onions and fennel, coating the
potatoes with the oil and butter. Bake another 30 or 40 minutes until potatoes are golden brown.
Allow to stand for ten minutes before serving. Enjoy!
