A fine appetizer to go along with the pasta dish that you are cooking awaiting the arrival of Sofia
Loren. Expect to spend upwards of half an hour in prep time. Don't forget to preheat your oven
to 450F.



1 baguette (cut into 1/2 inch slices on the diagonal.)
6 tomatoes (diced and peeled)
2 cloves McBride's Organic Farm garlic (chopped)
2 McBride's Organic Farm green onions (chopped)
1 T olive oil (for mixing purposes)
1/4 c olive oil (for brushing purposes)
3 T McBride's Organic Farm basil (chopped fine)
1 t balsamic vinegar
1/4 c grated parmesan cheese (optional)

Toss everything but the baguette and 1/4 cup of oil into a mixing bowl and let stand for the
flavours to blend together. Brush the underside of the baguette slices with the reserve oil and
brown in oven. Once brown remove bruschetta from oven and spoon a dollop of the mixture on
each slice. Sprinkle the optional parmesan at this time and place back in the oven for an
additional five minutes. Sofia Loren should now be at your door.
