The Middle East meets Cottage Country with this delicious garlic scape hummus recipe that is
an ideal treat at the lake. While garlic may ward off vampires garlic scapes should be able to
ward off the mosquitos.



2 c McBride's Organic Farm garlic scapes
2 c chickpeas
1 c walnuts
1/2 c tahini
1 lemon
1/4 c extra virgin olive oil
1/2 c water
1 t cumin

Mix all ingredients in a food processor and serve. Make this recipe your own by substituting
walnuts for pine nuts and add a cup of McBride’s Organic Farm arugula, mustard, mizuna or
spinach. For the more adventurous add some cayenne or hot sauce but be forewarned - the scapes
will pack a wallop. Cheese lovers may want to include a cup of grated parmesan. We've tried all
sorts of variations on this simple recipe and have enjoyed them all. For a creamier hummus add
more oil and water.
