A holiday favorite in the McBride household, our pumpkin pie has a patriotic maple touch that
we think you'll love. Just remember to cook it the day before so that your pie can cool overnight.



1 McBride's Organic Farm pie pumpkin (quartered, baked and cool)
3 organic eggs
3/4 c organic milk
3/4 c heavy cream
3/4 c maple syrup
1 t cinnamon
1 t ginger
1/2 t nutmeg
1/4 t allspice


Okay, so you've quartered, baked at 400C for one-half hour, and cooled your pumpkin. Keep that
aside for now. Whisk the eggs first, then the remaining ingredients before blending in the
pumpkin - approximately two cups. We don't make pie crusts but yours should be warmed in the
oven before adding your scrumptious pumpkin filling. Cook your pie for 30 minutes at 375C
until the centre has the consistency of jelly. Let pie cool on the rack and refrigerate overnight
before serving.
